I have always been a huge fan of Tzatziki and pitas. My mom used to buy this gyro meat dinner pack from Jewel and it came with lamb gyro meat + tzatziki + pitas and I went absolutely nuts for it! I think Trader Joes still has a similar product. Unfortunately these products do not have thee healthiest ingredients I’ve ever seen, so I’ve resorted to making this quick & easy chicken version instead. The key is the tzatziki sauce which is insanely easy to make but adds the best flavor. I made gluten free pitas for this meal, but you could also buy pitas (gluten free or regular) from the store. For a paleo or Whole30 option you could eat this over roasted eggplant slices, with a big ole pile of roasted potatoes or on a bed of salad. The possibilities are endless but they’re all so good. Oh, and definitely make sure to have leftovers because this is so great the next day.
Easy Chicken Pitas with Tzatziki
Ingredients
- 1 lb Boneless Chicken breast or thighs
- 2 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- 1 tsp cumin
- 1 tsp garlic salt
- 1 tsp onion salt (or onion powder)
- 1/4 tsp cardamom***
- 1/4 tsp cinnamon***
- 1/2 tsp coriander***
- 1/2 tsp pepper
- Salt to taste
- 1 tbsp avocado oil
Easy Tzatziki
- 1 cup yogurt**
- 2 persian cucumbers
- 2-4 cloves minced garlic**** (we measure garlic with the heart)
- 1/2 lemon juiced
- 1 tsp salt (opt)
- 1/4 cup fresh chopped dill
Instructions
- Mix all the dry spices together in a large bowl
- Cut chicken into large cubes & add to the spice mixture. Add 1 tbsp of avocado oil and toss the mixture well until all the chicken is well coated in the spice mixture.
- Preheat a skillet over medium low heat.
- When the skillet is hot add the chicken and cook undisturbed for about 3-4 minutes. Stir the chicken and continue to cook until all sides of the chicken have been cooked and the internal temperature reaches approximately 165 degrees.
- Serve the chicken with a pita & tzatsiki. Top with sliced cucumber, tomato, onion, and radish or any other toppings you like. For a paleo option, skip the pita and add roasted potatoes.
Tzatziki
- Finely chop your cumber into cubes. Chop the dill and mince the onion.
- Stir all ingredients together and mix well. Add salt to taste. Ideally, let the mixture chill in the fridge for 15-20 minutes.
