The first time I made this banana cake with browned butter glaze was when I was in high school. I served it to some of my close friends and one of them actually said he would marry me if it meant getting to eat this cake for the rest of his life. Since then I have made and shared this cake with many friends and family and the results are clear: it’s a WINNER!
I like to think of this cake as banana breads slightly fancier cousin. If you like banana bread, then you’re going to love this cake. The browned butter glaze which is a mix between a frosting and a glaze, lends a nutty and caramel-y flavor to the already delicious banana cake.
Browned Butter:
If you’ve ever visited my page before then you know that browned butter is an essential component of nearly all of my baked good recipes. And for good reason, it is so delicious.
Step by Step Instructions:
Start by placing the butter in a small saucepan over medium heat until the butter has melted completely and begins to bubble. Once the butter is bubbling, stir continuously until it starts to froth and foam. Continue stirring until it begins turning brown and smells nutty. It is done when the butter is a golden color and the browned bits on the bottom of the pan are a dark brown. The butter should not be black and it should not smell burnt! While cooking browned butter it’s always a good idea to watch it continuously, and either stir the butter or swirl the pan constantly.
Banana Cake with Browned Butter Glaze
Ingredients
- 1 Cup Sugar
- 1/2 Cup Browned Butter
- 2 Eggs - room temperature
- 1/2 Tbsp Vanilla Extract
- 1 Cup Full Fat Greek Yogurt
- 3-4 Bananas - Mashed
- 2 Cups All Purpose Flour
- 1 Tbsp Baking Soda
- 1/2 Tsp Sea Salt
Browned Butter Glaze
- 1/2 Cup Browned Butter
- 1/4 Cup Milk of Choice (I used almond milk)
- 1 Tsp Vanilla Extract
- 3-4 Cups Powdered Sugar**
Instructions
- Preheat oven to 350 degrees
- Brown the butter in a small saucepan
- In a bowl combine browned butter and sugar
- Add in eggs and stir well to combine
- Add vanilla extract, mashed bananas, and greek yogurt and stir well to combine
- Add flour, baking soda, and salt and stir to combine
- Pour into a greased 9x12 pan
- Bake at 350 for 20-25 minutes until a toothpick comes out clean.
- Allow the cake to cool for about 30-45 minutes
- Meanwhile, prepare the glaze
Browned Butter Glaze
- Brown the butter in a small saucepan
- Combine browned butter, powdered sugar, vanilla, and almond milk and whisk well to combine until it's smooth
- Pour glaze over slightly cooled cake - the cake should still be warm when you put the glaze on it
- Serve & enjoy!
