Banana Cake with Browned Butter Glaze

Ingredients

  • 1 Cup Sugar
  • 1/2 Cup Browned Butter
  • 2 Eggs - room temperature
  • 1/2 Tbsp Vanilla Extract
  • 1 Cup Full Fat Greek Yogurt
  • 3-4 Bananas - Mashed
  • 2 Cups All Purpose Flour
  • 1 Tbsp Baking Soda
  • 1/2 Tsp Sea Salt

Browned Butter Glaze

  • 1/2 Cup Browned Butter
  • 1/4 Cup Milk of Choice (I used almond milk)
  • 1 Tsp Vanilla Extract
  • 3-4 Cups Powdered Sugar**

Instructions

  • Preheat oven to 350 degrees
  • Brown the butter in a small saucepan
  • In a bowl combine browned butter and sugar
  • Add in eggs and stir well to combine
  • Add vanilla extract, mashed bananas, and greek yogurt and stir well to combine
  • Add flour, baking soda, and salt and stir to combine
  • Pour into a greased 9x12 pan
  • Bake at 350 for 20-25 minutes until a toothpick comes out clean.
  • Allow the cake to cool for about 30-45 minutes
  • Meanwhile, prepare the glaze

Browned Butter Glaze

  • Brown the butter in a small saucepan
  • Combine browned butter, powdered sugar, vanilla, and almond milk and whisk well to combine until it's smooth
  • Pour glaze over slightly cooled cake - the cake should still be warm when you put the glaze on it
  • Serve & enjoy!

Notes

** 3 cups will yield a thinner glaze, and 4 cups will yield a thicker more frosting like glaze.
